This cheese curler with a dome is known as a Girolle or a Frisette, and it’s for cutting thin curls of cheese from Tete de Moine, to cheese tommettes from Agour. Curling the cheese in this way aerates it, adding more flavour. Pins on the bottom of the wooden board hold the cheese firmly in place. It’s also suitable for cutting slabs of chocolate for cake decoration.

This Girolle (also known as a Frisette) is made by Boska and makes a great, interactive centrepiece at the dinner table. Cheese cutters are most often used with Tete de Moine cheese, where each turn of the blade shaves off a delicate, paper-thin curl, ready to be eaten. Slicing the cheese so thinly aerates it, intensifying the taste, and it’s then ready to enjoy with a glass of wine or scattered over freshly-cooked pasta.
