Agour’s French Basque sheep’s cheese is renowned for its creamy texture and peppery flavour. This raw milk cheese is made from pasteurised sheep’s milk, and its paste has a firm texture with red flecks, thanks to the Espelette pepper puree added directly to it.

The Piment d’Espelette pepper, which is not a hot chili pepper, gives a warm, smoky fruitiness to this cheese. This pepper has AOP status, meaning it can only be harvested from a pepper grown in the town of Espelette in the Basque region of France.

The cheese’s versatile tommette format, characterised by its round shape reminiscent of a small wheel, allows for various serving options. It can be paired with sliced Bayonne ham and bread for a simple yet generous aperitif or shaved onto vegetables and salads. Each cheese undergoes 2 to 4 months of refining, ensuring a nuanced flavour profile.
